Flapjacks

I decided to tackle a relatively simple recipe first. Flapjacks, for those not in the know, are essentially an Irish muesli bar. My husband makes these very well, so I was interested to see how Darina's recipe differed from his.

The first thing I noticed is that it contained more butter. Like, a lot more butter.



Darina, that's a lot of butter. (There's also golden syrup and vanilla essence in there.)

Then we add oats and sugar, which is pretty standard. I mixed things up a little by adding chunks of white chocolate - hey, it's not like it was healthy to begin with. (Oh God, this is probably how Paula Deen got started, isn't it!?)



I like my flapjacks thick and squishy, so I used a smaller tray size than was recommended.

A Challenger Approaches

So, about a week ago, my mother-in-law gifted me with an enormous, wrist-breaking cook book. To be exact, she gave me Darina Allen's Ballymaloe Cookery Course book, which looks like a veritable cook's bible. I've decided to cook (or attempt to cook) every recipe in the book, Julie/Julia style. Although without the extra-marital affair bit.
